To get started, you'll need:

Rinse the beet under cold water and remove any dirt or debris.
Using a sharp knife, trim off the stem and root ends of the beet.
Peel the skin off the beet using a vegetable peeler or knife.
Place the beets into the pressure cooker, and pour the water over them
From the main menu, select 'Auto Cook' and select 'Simmered Beets' from the recipe presets. Press 'Ok' to start.
Securely attach lid and set the pressure release valve to 'SEAL' Press 'Ok' to start.
Once cook time has finished, ensure that the float valve has fully descended, then turn the pressure release valve to 'VENT'. Confirm that all steam has released from the valve before opening the lid.
Serve the simmered beets as is or mash them and use as a spread or topping for sandwiches or salads. Enjoy!
