Homemade Choucroute in the pressure cooker

1 lbs Pork loin

5-7 pieces Sausage

½ lbs Sauerkraut

1 tbsp Sugar

1 Bay leaf

½ cup White wine

1 tsp Consommé seasoning

To get started, you'll need:

From the main menu, select ‘Manual Cook’ and then choose ‘Sear/Sauté’. Set the heat level to level 3.
Add a little oil and brown the pork loin on all sides, about 3-4 minutes
Remove the pork from the pressure cooker and set it aside.
In the same pressure cooker, sauté the diced onion and minced garlic until translucent.
Add the sliced carrot and diced potatoes to the pressure cooker and sauté for a few minutes.
Add the rinsed and drained sauerkraut to the pressure cooker, along with the browned pork loin, sausages, thyme, bay leaf, white wine, consommé seasoning, and sugar. Season with salt and pepper to taste.
From the main menu, select 'Auto Cook' and select 'Choucroute' from the recipe presets. Press 'Ok' to start.
Attach lid (make sure the lid is sealed, and securely in place) and set the pressure release valve to 'SEAL' Press 'Ok' to start.
Once cook time has finished, ensure that the float valve has fully descended, then turn the pressure release valve to 'VENT'. Confirm that all steam has released from the valve before opening the lid.
Serve the choucroute hot, garnished with additional thyme if desired.
